Instructions

Season the chicken pieces generously with salt and pepper, and dust with flour. Brown the chicken in a saute pan, then drain well and set aside, reserving some of the fat for the vegetables.
In the same saute pan, sauté the mirepoix (onions, carrots, and celery) along with the chunked carrots, parsnips/rutabaga/turnips, thyme, oregano, basil, bay leaves, cracked black pepper, chili pepper flakes, and sugar or honey (if using) in the reserved fat for 7-8 minutes.
Dust the vegetables with 1 tablespoon of flour and mix well.
Add the sliced garlic and sauté for 1 minute.
Deglaze the pan with some chicken broth, then add the remaining broth and crushed seasoned tomatoes. Incorporate well.
Transfer the chicken and the cooking liquid to a stock pot and simmer uncovered for 55-60 minutes (10 minutes less for white meat).
Add the lemon juice and any precooked vegetables (if using) for the last 15 minutes of cooking.
Remove the chicken to a platter and cover with foil if you want to reduce the cooking liquid further. Then, add the reduced liquid to the platter.
If possible, cook the dish one day before serving. It will allow the flavors to blend better, and it will be easier to remove the fat. If cooking ahead, reduce the cooking time by 10 minutes to account for reheating.

Notes

Garnish with lemon zest, parsley, and chopped garlic.
